Curried Sausages

What you need:

6-8 Sausages (any kind will do)

1- 2 Brown onions

1TBSP garlic minced

2 – 3 carrots sliced

2 cups of frozen green beans

2 TBSP curry powder

2-4 chicken stock cubes and 3 cups of water

OR 3-4 cups of chicken stock

2 TBSP corn flour (to thicken)

Any other vegetables 

(Feel free to add lots of veggies, if you need more gravy just add a little extra water to the mix.)

Salt and pepper as desired 

This is very easily adjusted, want more liquid then add extra stock or water, or if you like it thicker add a little extra corn flour.

Feel free to add more vegetables – there’s plenty of sausage gravy so it can take it!

How to make it

Curried Sausages are a great quick dinner recipe. The part that takes the longest is browning the sausages – about 6 to 8 minutes. The curried sausage gravy only takes about 5 minutes to make!

Brown sausages, then remove and cut into chunks, the thinner you cut it the more sausage you’ll get in each bite.

Sauté onion and garlic – essential flavor base for an otherwise simple gravy;

Cook off curry powder – this little extra step will bring out the curry flavor, again, an essential step. I do this in all my simple curry recipes including my everyday Chicken Curry Pasta.

Add in the chicken stock, the veggies, and your sliced sausages.

Simmer for a few minutes until all vegetables are cooked. Thicken with a corn flour slurry (regular flour will do in a pinch) to desired consistency. 

Serve over mash, rice, or noodles, or mop it up with bread!
