Chorizo Pasta


1 Packet of Pasta 500gm

2 Chorizo Sausages

1 Brown onion

Garlic (as desired) 1TBSP

2 Carrots

300ml Cream

2 Stock cubes

1-2 cups of water (depending on the size of your pan)

Salt &pepper

1 cup of cheese

(Optional spices parsley and paprika)

This is also really nice with fresh capsicum diced and added in right at the end.

Slice your chorizo thinly.

Grate the carrots

Slice or dice the onions

The Method

Brown your Chorizo in the pan and set it aside.

In the same pan saute your onion until translucent, then add in garlic and cook till fragrant (1min).

Then add in your grated Carrot and cook until soft. If making a one-pot meal this is where you would add in your water, stock, and pasta to cook. Add enough water to cover your pasta.

Otherwise, add your cooked pasta and 1-2 cups of pasta water to the pan to help make your sauce. 

Once your pasta is almost cooked add in your cream, and cook till thickened, 2-3 mins.

This is where you can add salt and paper, parsley, and paprika if desired. 

Throw the Chorizo back into the pan and add in your cheese. Mix well.

Serve with garlic bread or add in additional veggies if desired.
