White Chicken Chili

White Chicken Chili with Rice.

(High protein, budget-friendly, warm and filling, and gluten-free!

2 cups of white rice – $0.70

1 Chicken breast – $3 (carving your own, would be cheaper than buying)

1 x 400gm tin of corn kernels – $1

1 Brown onion – $0.30

1/2 cup of dried white beans – $0.57 (you can swap for a can of beans, for convenience).

Jalapenos – $0.35 – To your taste, you can use fresh. I use one whole one without seeds, it’s not spicy, and the kids enjoy it.

1 tub of cream cheese – $3.10

Chicken Stock – Free or $0.40 ( 2-3 stock cubes)

= $9.02
